Just because Holly Asked!

I have been working hard on my project that I was taking my time out of blogging for but one of my sweet blogger friends left a recent comment and I quote "Gone long enough already!!! Come back!".  That would be Holly of I Wish I Were a Walton, so since I cannot resist a request from a friend I will try and start posting again.  Unfortunately I do not have anything completed to brag about.  I can tell you that I would love to be spending some time here:

And I would not mind having one of these while doing the sitting.

But this is actually what I have been doing most of the last three weeks:

 And my kitchen has looked like this and much worse most of the last month and a half:

But we did have a birthday party to go to a couple of weekends ago for our youngest grandson who
turned 2.

This was about an 8 foot sundae that was catered to their front lawn.

We have been eating a lot of fresh vegetables from our garden this year and I made a wonderful eggplant dish a couple of weekends ago that I thought I would share with you.  We had two really pretty eggplants that hubs brought in so I took some time surfing the web for a good recipe.

This is the the recipe that I found at Recipe4Living.  It is a little long so I am just going to send you that way

Hubs said its a keeper and I just found in my Ball canning/freezer book that you can freeze eggplant so I will be putting some in our freezer so we can have this yummy recipe again.

Time Out

Well I know my blog is not a very busy site but I wanted to let you all know that my computer is getting unplugged so the large piece of furniture it sits in can be moved out of the room I am painting and having new carpet installed in.  I may be able to visit your blogs from my husbands work laptop in the evenings but I do not think there will be any new posts for a while.  Hope you are all having a wonderful summer and when I return I can show you how this room turns out.  Blessings!

Last night I watched the new VeggieTales movie with the granddaughters. "Sweetpea Beauty A Girl After God's Own Heart"  At the end of the movie was a pretty song sung by Nichole Nordeman.   Have a great Sunday!
